Under general supervision of the Executive Chef, responsible for institutional bakery operation utilizing commercial bakery equipment and producing bakery products in moderate to large volumes, 50- 1,000 portions. This includes, but is not limited to, yeast breads, rolls, pastries, cakes, desserts, etc. Instructs and directs student employees involved in bakery production maintaining food safety and sanitation standards.
- Knowledge of food safety and sanitation principles.
- Food preparation skills.
- Ability to work as part of a team.
- Experience with training, coaching, and directing others.
- Ability to plan a production schedule and evaluate the importance of completion.
- Knowledge of yeast bread, roll, pastry, and dessert production techniques.
- Knowledge of decorating techniques, e.g. on cakes, cookies, desserts.
- Knowledge of bakery production equipment and commercial foodservice equipment.
- Formal ServSafe training and or certification.
- Knowledge of foodservice portioning and portion control techniques.
- Experience/knowledge of foodservice recordkeeping.
- Pastry degree.
- 1 year of commercial baking experience.
- Customer service skills.
- Knowledge of standardized recipe development.
This is a school year position that will work during the academic year and be off over the break periods and summer months. Schedule posted weekly. Typical shift: Monday- Friday 4:00 a.m.-12:30 p.m.
Employee must be able to lift 30-50# on a frequent basis. Constant standing/walking with frequent bending and stooping must be done to perform job tasks.
The minimum starting salary is $14.20 per hour. Night and weekend differential can apply to this position.
-Night Differential (45 cents) - additional pay for all hours worked on a regularly scheduled shift during the period between 6:00 p.m. and 6:00 a.m.
-Weekend Differential (60 cents) - additional pay for all hours worked between 12:01 a.m. on Saturday and 12:00 Midnight Sunday.
Differential pay shall not be paid to an employee absent on leave with pay (vacation, sick leave, holiday, etc.), during the period in which the employee would otherwise be regularly scheduled to work hours that would qualify for differential pay. The employee must work the qualifying hours to be eligible for differential pay.
A six-month probation is required. This position is also contingent on passing an essential job function test.

University Dining Service is a self-operated auxiliary on the UW-Stout Campus with a $10 million budget. The department has three facilities that house and provide services at other location across the campus: Merle Price Commons, North Point Dining and the Memorial Student Center. There are two cafeterias, Commons and North Point, retail outlets in the Student Center, (food court & marketplace) express locations in academic buildings and c-stores in cafeterias. Campus catering and concessions are also functions of this department. The department has 41 permanent staff and over 500 student employees. Some locations operate year-round and others are closed during the summer period.
